Harvest Granola Bars



  • 2 C whole oats

  • 1 C whole almonds rough chopped

  • 1 C unsweetened coconut chips

  • 1/2 C wheat germ

  • 2/3 C honey

  • 1/4 C light brown sugar

  • 1 1/2 tsp vanilla

  • 1/4 tsp salt

  • 1/2 C chopped figs

  • 1/2 C chopped dried apricots

  • 1/2 C dried cherries


  1. Preheat oven to 350 degrees. In a large bowl, mix together the oats, almonds and coconut and pour on a large sheet pan covered with parchment paper. Toast in the oven for 10 minutes then return to the large mixing bowl. Add the wheat germ. Reduce oven temperature to 300 degrees.

  2. While first three ingredients are toasting, combine the honey, brown sugar, vanilla and salt in a small saucepan. Bring to a boil over medium heat and cook for 1 minute once it boils. Pour over the toasted oats, almonds, coconut and wheat germ mixture. Mix well and add the dried fruit. Pour mixture into parchment lined 9 x 13 pan and press firmly with wet hands.  This is an important step to help your ingredients stay together.

  3. Bake for 30 minutes @300 degrees. Allow to cool completely(about 3 hours) before slicing and serving. Yield: 18-20 bars.
